Originária da região mediterrânica e do sudoeste asiático, a Glycyrrhiza glabra é uma planta herbácea perene da família das leguminosas que pode atingir cerca de um metro de altura e desenvolve um sistema radicular extenso. Numa floresta comestível, desempenha um papel importante na fixação de azoto atmosférico no solo e na melhoria da sua estrutura através das suas raízes profundas. Integrada nas camadas herbácea e subterrânea, esta espécie oferece ainda uma colheita valiosa de raízes aromáticas com utilizações medicinais e culinárias.
